INGREDIENTS
1kg Wheat Flour 70%
100gr Sugar
50gr Honey
20gr Malzin Hell liquid malt, product code 1545
45gr Yeast
30gr Salt
30gr FRESKO, product code 2043
30gr Sunflower Oil SOL, product code 2638
800gr Water
Cranberry 10-15% on the mix
METHOD
Knead the dough for 4’ at slow speed and for 6’ at high speed.
Rest the dough for 30’.
Cut the dough into 80gr pieces and shape into circles.
Decorate
Proof for 30’
Bake at 210 οC for 15-18′
Use steam.
