INGREDIENTS
1000gr ISA MACARON
200gr Water (50ο C)
METHOD
Mix with a wisk ISAMACARON with hot water (50°C), at low speed and then 4 minutes at high speed. Color the mixture and keep mixing for another 4 minutes at high speed. Pipe on a Silpat® sheet with plain nozzle (10-14mm). Leave the piped dough on the Silpat® for 20 minutes at room temperatures. FAN OVEN: Bake at 140°C for 10-14 minutes on simple baking tray, exhaust open.
DECK OVEN: Bake at 160 °C for 20-25 minutes on 2 layered baking tray, exhaust open.
