Oats & Honey Bread
INGREDIENTS
4kg OAT MIX
6kg Strong Wheat Flour Type 70%
100gr OLYMPIAL SUPER PLUS
6kg Water
500gr Honey
200gr Salt
180gr Yeast
METHOD
Mix all ingredients for 12’ on low speed and 3′ on high speed.
Dough’s temperature at 26-28οC.
Let dough rest for 30 minutes. Then cut in desired weight.
Proof for 50 minutes.
Preheat the oven at 250οC with steam. Bake for approximately 30-35 minutes and after 5 minutes lower the temperature at 200οC.
