INGREDIENTS
500gr OKTASPORO KORN MIX
1kg Strong Wheat Flour Type 70%
800gr Water
120gr Sugar
30gr FRESCO or SOL
30gr MALZIN HELL
5gr Salt
45gr Yeast
15gr OLYMPIAL SUPER PLUS
Decoration: DECOR MIX
METHOD
Mix all ingredients for 4’ on low speed and 6′ on high speed.
Let dough rest for 30 minutes. Then cut in 80gr pieces and roll out into round bagels.
Dip the bagels in water and then in Decor Mix.
Proof for 30 minutes.
Bake at 210οC for approximately 15 – 18 minutes with a little steam.
