Oktasporo Rusks with Added Nutritional Value
INGREDIENTS
4kg OKTASPORO – ADDED NUTRITIONAL VALUE
4kg Wheat Flour Type 70%
3,80kg Water
160gr Yeast
200gr Olive Oil
METHOD
Mix all ingredients for 2’ on low speed and 5′ on high speed.
Cut dough in 900gr pieces and make them into long sticks, at the length of the baking tray.
Dust flour over each stick.
Cut with a spatula each stick, pieces of “one finger” thickness.
Proof for 30 minutes.
Preheat the oven at 210οC with steam. Bake for approximately 35 minutes with a little steam.
The next day dry out the rusks by baking them for 3 hours approximately at 120 – 150οC.
